Pineapple fried rice is the perfect mix of sweet, spicy, and savory and is a must have in your cooking repertoire. For the perfect, satisfying dish when you don’t really know what you want to eat, try pineapple fried rice!

2 cups Rice (Cooked, white or brown.)
1.5 cups Pineapple (Chunks, drained. Canned is fine.)
1 Red Bell Pepper
2 tbsp Coconut Oil
2 large eggs
.25 cups Green Onions (Chopped)
2 tsp Ginger (Grated or finely chopped)
2 cloves Garlic (Finely chopped)
3 Green Chilis
1 tbsp Soy Sauce
2 tbsp Cashews (optional)
1 tsp Curry Powder (optional)
1 wedge Lime (Optional)
Cook rice per package instructions or using a rice cooker. Set aside and cool.
While the rice cooks, prep the veggies.
Heat up a pan and add the coconut oil.
Immediately add in the pineapple, garlic, ginger, and chiles.
Let the pineapple caramelize, stirring occasionally.
Once the pineapple is golden brown, add in the cashews (optional), curry powder (optional), and bell peppers. Sautée for 30 seconds. The peppers don’t take long to cook and will continue cooking with the other ingredients.
Add in the rice. Stir well.
Add in the soy sauce. Stir well.
Create a little well, or open space in the pan. Add in eggs to this “space”. Let the eggs cook for about 30 seconds, then stir and combine with the rice. Let cook, stirring constantly for another minute.
Add in the green onion, stir and remove from heat.
Pile up high on a serving dish or in a bowl. Garnish with some fresh green onions, cilantro, a lime, and some more cashews. Bon Appétit!
