Eating plant based shouldn’t be a challenge! Try this summery and flavorful veggie sandwich for your next plant based lunch. Packed full of fresh veggies, it’s the perfect budget friendly sandwich to have in your lunchbox!
At the end of June, Sprouts hosted a small group of bloggers and dietitians at their headquarters in Scottsdale, AZ to talk about the benefits and challenges of plant based eating. One of the difficulties of eating a plant based diet is that convenient plant based options are often difficult to come by. Many delis or sandwich counters only have one or two options at best.
Sprouts is on a mission to help people eat better and make it easier to try a plant based diet! To help brainstorm a new plant based sandwich recipe to add to their in store menu, Sprouts held a “market basket” challenge for us attendees. The winning sandwich would help inspire a new sandwich offering at Sprouts at their deli counter! I love the dedication this brand has to helping people eat healthy.
A market basket challenge is similar to the TV show “Chopped”. Each team was given a basket full of ingredients we had to use as well as access to a fully stocked pantry of healthy plant based ingredients to finish off our final dishes. I teamed up with a fellow blogger, Molly from Spices in My DNA (if you haven’t checked out her blog, you really should – she’s brilliant!) to tackle our market basket.
Our market basket ingredients included vegan cream cheese and chive spread, baby kale, and sourdough. Molly and I brainstormed our favorite fresh ingredients that we expected would pair well with the basket… We loved the pops of flavor from radishes and onions, the smoothness and richness of the avocado, and the refreshing hint of cucumber! We lightly seasoned our sandwich with salt and pepper and voil – it was ready for the judges!
Our market box challenges were taste tested by Chef Matt Pratta, Director of Culinary, and his team at Sprouts. We were so nervous to hear the results! The other teams had also been so creative with their sandwiches, some using kimchi and other delicious ingredients to dream up the “ultimate vegan sandwich”!
We were so thrilled to hear that the chef and his team enjoyed our sandwich and we won the challenge!! I’m excited to see the new offering that Sprouts will be rolling out soon. In the mean time, check out the winning sandwich recipe below! All the ingredients can be found at Sprouts!
I used Kite Hill’s plant based chive cream cheese spread when I made this sandwich at home. I also really loved swapping it out and using “Vegenaise” – a plant based mayo. You can find both ingredients in the vegetarian/vegan case at Sprouts. Don’t forget to season with salt and pepper – it really makes the flavors pop!
