If living through a pandemic has taught us anything, it’s to count our blessings and cherish our relationships. We’ve been fortunate enough to have our parents in our “quarantine bubble” this past year and I love seeing our daughter have the opportunity to bond with her grandparents!Having all three generations together has made this past year of social isolation more bearable for us. We like to get the family together for brunch – especially for celebrations like holidays or our daughter’s first birthday! It’s so sweet to see our little one play and have full on gibberish “conversations”  with her doting grandparents!

Making sure that everyone is well fed can be a fun challenge when it comes to our family gatherings. We have vegans, vegetarians, pescatarians, gluten-free, dairy-free dietary needs in our family. So, when we have everyone over for brunch, I love setting up a breakfast bowl station with lots of fruit, different types of granola, nuts, toppings, and yogurts and yogurt alternatives.

My favorite yogurt alternative for these occasions has been So Delicious® Dairy Free Coconutmilk Yogurt Alternative. It’s gluten and dairy free, Non-GMO Project Verified, and vegan. I like to get the plain unsweetened flavor for my breakfast yogurt (alternative) bowls because I can use leftovers for smoothies, oatmeal, or savory dishes after the fact. However, the Coconutmilk Yogurt Alternative comes in so many different flavors! The raspberry or strawberry flavors would be delicious with this recipe as well.

In addition to the So Delicious Yogurt Alternative, my breakfast bowl brunch bar also has vegan granola options (many are also gluten and nut free!) and sweetener options as well. A great vegan sweetener I’ve found is date syrup! You can find this at most grocery stores (many carry the yogurt alternative too for one stop shopping!) in the aisle with baking supplies or with the honey and other sweeteners.

The bar wouldn’t be complete with lots of options for fruit. I always have bowls of different kinds of berries, with strawberries and blueberries being staples. I also found pomegranates are in season in the winter and make delicious toppings in a yogurt bowl!

Pomegranates can be a pain to cut and remove the seeds if you buy them fresh. The juice often sprays everywhere staining every surface in sight. I learned a nifty trick to spare your clothing while de-seeding pomegranates: hold a cut piece of pomegranate in a large bowl full of water and gently remove the seeds. Any excess membranes float to the top, the seeds sink. And best of all – no juice gets sprayed! You can find other techniques to remove pomegranate seeds here
