Veggie Mac

A budget friendly weeknight staple full of fresh veggies and a childhood favorite.




  1. Boil pasta according to package instructions.
  2. In a large pot, heat 1 tbsp olive oil over medium heat.
  3. Add onions. Sauté for 1-2 minutes or until lightly browned.
  4. Add zucchini, sauté for 3-4 minutes.
  5. Add bell peppers and spinach and sauté until spinach wilts.
  6. Add milk, the cheese packet from the mac n cheese, and the garlic. Stir until the powder is dissolved.
  7. Add pasta and butter and mix thoroughly. Salt if desired.
  8. Top with tomatoes and fresh basil and serve!
