Whole30 Chicken and Zoodles

Try this healthy, gluten-free, dairy-free, diet-friendly, Whole30 compliant Chicken and Zoodles dish to fill you up when you’re in the mood for Italian! The zoodles are a healthy alternative to pasta and the homemade tomato sauce omits artificial flavors, preservative, and added sugar as compared to store bought brands.   • 2 tbsp olive oil
  • 2 oz organic chicken breast strips (Strips tend to cook quicker and more evenly so are best for beginners)
  • 1/4 cup almond flour (For dredging)
  • 1 large egg
  • 1 medium zucchini
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can crushed tomatoes
  • 1 clove garlic (crushed)
  • 1 whole Bay Leaf
  • 1 tsp basil ((optional – for garnish))



  1. Prepare the zoodles by cutting the zucchini into noodle like strips using a spiralizer or knife.
  2. OPTIONAL: If desired, sautée or microwave noodles to achieve desired tenderness.

Homemade Pasta Sauce

  1. Heat up a pan with 1 tbsp olive oil.
  2. Add in crushed garlic. Sautée for 30 seconds gently.
  3. Add in can of crushed tomatoes.
  4. Add in 1 bay leaf and cover with the sauce.
  5. Let simmer gently for 30 minutes for a rich and flavorful sauce.


  1. Prepare 1 plate with almond flour, salt and pepper. Mix thoroughly.
  2. Prepare another plate with 1 egg, beaten.
  3. Dip the chicken first in the egg, then in the almond flour. Place aside. Repeat with all the chicken strips.
  4. Heat a pan with 1 tbsp of olive oil.
  5. Place coated chicken strips in pan, cook each side for 3-4 minutes until chicken is fully cooked. For food safety, you’ll want the internal temperature of the chicken to be 165 degrees Fahrenheit.


  1. Plate up with the Zoodles, some sauce, the chicken and some basil for a colorful ad healthy meal!
